FU is an initial word by a word FUSION, it has mean combined several things into one by melted in the dictionary, and it has the same meaning in our cuisines too.Because have combined and melted different cultures and tastes from several countries and places into one. La Fu was the name of James' private restaurant in Hongkong.
James is come from Hongkong, he have been lived in many countries of Asia, he speaks 3 kinds of Chinese, Thai, Japanese, English, French and a bit of German, if you can speak one of those, you can speak with our chef directly.James had his own private kitchen (La Fu) in Hongkong, he also have several years of catering cooking experience in Asia. James cooking techniques are included several kinds of Asian styles for example: Chinese, Japanese, Korean, Thai, Indonesian, Hai-Nam etc.
James had received many secret recipes from many special people in Asia, and those recipes are really different from the normal food you have had in the so-called traditional restaurant.For example: he has received some Ancient recipes from Thailand and the those recipes are by pass down thru generations to generations for more than hundred years. For example, James is the third generation of the real traditional currys, and those recipes and techniques are used to cooked for very important people in Thailand? He also has received some traditional Japanese recipes from some important people from Japanese Government etc... also there are many dramatic story amounts his cooking history!
James' main force is Hongkong cuisine, he respects in original recipes and techniques, also he is spectacular in improving tastes and technique base on those original recipes.He loves to add feelings and positive energies into each dish of his cooking. He says: "Even you're not a good chef it doesn't matter, only if you cook by your heart, people can feel it and they will like it! Because your cooking have heart and feelings also have CONNOTATION, which is more important than the tastes, colors and the price on surface!" when you have James dishes you may tell the different taste between the original recipes and the so-called traditional food in the restaurant in town, at the same time you may feel the feelings of James had put into your dish, you may fall in love with his food or fall in love... with him...
James calls himself a Gourmet Hunter & Recipes Hunter. He hunt for more new recipes for himself at the same time he improving his cook techniques and also creating new techniques of cooking. James is passionated on cooking, he loves to see people's face become happy while they having his food. James used to wrote recipes for magazines and newspapers in Hongkong.
One of his famous aphorism in his article on newspaper in Hongkong: Never follow what the cook book teach you, because the tastes of your cooking are stabilize by yourself, only you will know your own taste, people says it's good it doesn't mean it's good for you!
He also says on magazines in Hongkong:When you're cooking at home you can put any extra seasoning you like, but if you're in the restaurant we better shows the manner of respects to their chef. Try not to put extra seasoning while you having their dish, you can ask the chef to cook more salty or spicy or what ever (in their way) but try not to add the extra seasonings yourself, except the dish you have is accompany with designated sauces.
To have James' dishes, all you need to do is: Open your mind, wider your heart to receive something really original and unique from our planet which is not flat.
James: If you don't care or don't respect the food you're having each day, then it won't be different from a cow chewing grass, but at least the cow might feel tasty.
